"Marry Me" Chicken
My mom found this recipe while browsing Facebook. It's similar to the One Pot Pasta recipe in how all the ingredients come together, but the tools and order of operations are a bit different.
Ingredients
- Boneless skinless chicken breast
- Olive oil
- Sun-dried Tomatoes
- Tomato paste
- Oregano
- Red pepper flakes
- Black pepper
- 2.5 cups of chicken broth
- 1 cup heavy cream
- 1 box Spinach
- 10~11oz pasta (I like Cellentani)
- 1 sweet/vidalia onion
- Garlic
- Parmigiano reggiano
Order of Operations
- Slice onion into strips
- Mince garlic
- Butterfly and season the chicken breasts
- Bring a dutch oven or pot to heat
- Add olive oil to dutch oven/pot
- Add seasoned chicken
- Let the chicken sear on both sides, then remove to separate plate
- Add oil from jar of sun-dried tomatoes
- Add sliced onion to pot and let onions cook
- Add sun-dried tomatoes and garlic as onions finish cooking
- Once onions, tomatoes, and garlic are cooked, add 2 quarter-sized drops of tomato paste
- Mix onions, tomatoes, and garlic with tomato paste and cook for an extra minute
- Add 2.5 cups of chicken broth
- Add oregano, red pepper flakes, and black pepper
- Stir and wait for broth to boil
- Add pasta once broth starts boiling
- While pasta is cooking, dice the seared chicken
- After pasta finishes cooking, add 1 cup heavy cream and stir
- Grate some parmigiano reggiano over the pot and stir again
- Add box of spinach and diced chicken, stir again

You may want to add 3 cups of chicken broth
