Country-style Omlette
Ingredients
- 2-4 eggs
- Half & half
- 1 tablespoon butter
- Salt & pepper
- Fillings (examples)
Order of Operations
- Crack 2-4 eggs into a mixing bowl
- Use index finger and ring finger (or end of spoon) to ensure all yolks are separate but intact
- Season with salt and pepper
- Optionally add a dash of half-and-half
- Whisk
- Add a tablespoon of unsalted butter to a pan over medium heat
- Let butter melt completely
- Pour whisked eggs into pan
- As edges set (will only take a few seconds), start pulling edges towards center of pan all around perimeter of omlette
- You'll have to tilt the pan as the egg cooks completely
- Once cooked, add toppings to one half of egg and use spatula to flip over second half
- While holding pan underhanded, flip pan onto plate so omlette plops onto plate
