Country-style Omlette

Ingredients

  • 2-4 eggs
  • Half & half
  • 1 tablespoon butter
  • Salt & pepper
  • Fillings (examples)
    • Cheese
    • Mushroom
    • Onion

Order of Operations

  1. Crack 2-4 eggs into a mixing bowl
  2. Use index finger and ring finger (or end of spoon) to ensure all yolks are separate but intact
  3. Season with salt and pepper
  4. Optionally add a dash of half-and-half
  5. Whisk
  6. Add a tablespoon of unsalted butter to a pan over medium heat
  7. Let butter melt completely
  8. Pour whisked eggs into pan
  9. As edges set (will only take a few seconds), start pulling edges towards center of pan all around perimeter of omlette
  10. You'll have to tilt the pan as the egg cooks completely
  11. Once cooked, add toppings to one half of egg and use spatula to flip over second half
  12. While holding pan underhanded, flip pan onto plate so omlette plops onto plate
