Basic Toastada & Refried Beans
Ingredients
- 2 cloves of minced garlic
- Cumin seeds
- Paprika
- Can of pinto or black beans
- Salt
- Lime juice
- Toastadas
- Cheese
- Lettuce
- Red onion
- Tomato
- Sour cream (optional)
Order of Operations
- Before cooking, prep cheese by shredding and prep vegetable toppings by dicing.
- Set oiled pan over heat
- Add garlic, cumin seeds, and paprika until garlic is aromatic
- Add entire can of beans, water and all
- Bring mixture to simmer
- Once simmering, use potato masher to mash the beans into pieces
- After bean mash, add salt and lime juice to taste
- Continue to simmer/cook so the water from the can reduces to a sauce, turning the bean mash into a paste (refried beans!)
- Transfer refried beans to serving bowl
- Layer ingredients on toastada in order, from bottom to top:
- Cheese
- Refried beans
- Sour cream (optional)
- Lettuce
- Onion
- Tomato
