BBQ Chicken (various parts)

Ingredients

  • Chicken
  • Flour
  • Corn starch or Tapioca flour
  • BBQ sauce
  • Hot sauce
  • Ketchup
  • Honey
  • Salt
  • Pepper

Order of Operations

  1. Preheat oven to 450f
  2. Pat dry the chicken parts of choice
  3. Create mixture from flour and corn starch, add salt and pepper to mixture
  4. Coat each chicken part with mixture
  5. Place chicken parts on baking sheet lined with parchment paper
  6. Place baking sheet in oven for 15 to 20 mins so chicken skin crisps
  7. Create mixture in small bowl of BBQ sauce, hot sauce, and honey while waiting
  8. Take chicken out of oven, coat top side of each chicken part with sauce mixture
  9. Place back in oven until sauce crusts (about 10 mins)
  10. Take out of oven, flip chicken parts and coat bottom with sauce mixture
  11. Place in oven until sauce crusts, remove and let cool

Remarks

Different chicken parts require different lengths of time in the oven for each oven phase:

  • Chicken wings = 15 minutes each phase
  • Chicken legs/thighs = 30 minutes for first coating phase, 10 for second

You can be lazy and skip the "pat dry" part, the flour and starch mixture, and only coat the top and sides of the chicken. This sacrifices the overall crispiness of the skin and creates a lot of water on the bottom of the baking sheet, but it makes the recipe easier to do and faster.
