Preheat oven to ~300 degrees Fahrenheit (325 is fine)
Grind the garlic clove
Take the eggs and mix them together in a small mixing bowl
Split the slice of cheese in half, place the slices and 1/2 tablespoon of butter aside
Pour the 1.5 tablespoons of maple syrup into a tiny bowl
Take the ground turkey and put it in a large mixing bowl
To the bowl, add the sage, thyme, salt, ground garlic clove, and 15-30 cranks of black pepper, depending on how fine/coarse the grinder grinds
Mix everything in the large mixing bowl. The turkey mix here can then either be transferred to a container for storage or divided into chunks for patties. If dividing into patties, dividing the mix into thirds will result in really large patties. This is fine for breakfast-as-dinner, but dividing it into fourths will result in sandwich appropriate patties.
Heat pan over medium-high heat, add oil/non-stick solution if not using a cast-iron pan
Once pan is hot enough, place patty in pan and let the patty cook for about 10 to 20 seconds depending on the size, then flip the patty and smush it with the spatula so it flattens out
Let the turkey start cooking on both sides, flipping occasionally
When the turkey patty is starting to develop its cooked crust, drizzle the maple syrup on the patty. This will give the patty further flavor and caramelize it
Once the patty is cooked, take it out of the pan and place it to the side, but do not turn off the heat on the pan
Add the 1/2 tablespoon of butter to the pan to melt it. Make sure to swirl it around to coat the pan
Add the scrambled eggs to the pan and start dragging them together to make the "scrambled" egg, but try to leave the eggs a little runny/underdone
Form the scrambled egg into a pile (or two, if using two eggs) and remove the pan from the heat so the egg cooks as slowly as possible
Crank some pepper on the egg, 1 or 2 cranks is fine
Assemble the sandwich on a baking tray (parchment paper on the tray):
bottom bread (optionally with a slight squeeze of ketchup)
turkey patty
egg pile
cheese
Place the top bread to any side of the rest of the sandwich
Place the baking tray into the preheated oven for 30 seconds to a minute or slightly longer: the goal here is that the cheese should melt
Take it out, place the top bread on the sandwich, let it cool, and enjoy
