Turkey Meatballs

Ingredients

  • 1 package of ground turkey
  • 1/2 cup of panko breadcrumbs
  • 2 tablespoons of grated parmesan cheese
  • 1 teaspoon oregano
  • 1 teaspoon "italian seasoning" mix (optional)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 egg
  • Seltzer

Order of Operations

  1. Preheat oven to 475f
  2. Mix all dry ingredients together in large mixing bowl
  3. Add ground turkey to mixture
  4. Add 1 beaten egg to mixture
  5. Add "splashes" of seltzer until mixture is pasty; not too mushy but not too solid
  6. Mix all ingredients together to incorporate
  7. Test consistency of mixture with fingers, add eyeball amounts of additional seltzer or breadcrumbs/cheese to make softer or more firm
  8. Form meatballs with either ice cream scooper or hands. If using scooper and the scoop part is small, overfill slightly. Mold each portion into an approximate ball.
  9. Place meatballs on baking sheet lined with parchment paper
  10. Place baking sheet in oven for 25 minutes, check with toothpick for "done-ness", should come up dry
