Sear chicken on both sides in cast iron pan; set aside when seared, shouldn't be cooked all the way but properly seared
Add olive oil for vegetables to cook and reduce
Add mushrooms first, let cook for around 3 minutes depending on heat
Add onions (you can also add a little more olive oil here if the pan is dry)
Veggies will finish cooking together (mushrooms cook slightly slower), once veggies are cooked, pour in entire bottle of beer and allow it to reduce for ~10 minutes
As beer reduces to a point where veggies don't float around but are still immersed in beer, re-add chicken to pan and add seasonings one by one to chicken
Drizzle some honey by eyeballing a squeeze across each chicken part
Let cook for 3~5 minutes, then turn off flame and move entire cast iron pan to oven, ensure the pan is uncovered
Once cast iron pan is in oven, let cook for 25 minutes
