Beer-braised Chicken

Ingredients

  • Chicken (thighs are best)
  • 1 white onion
  • 1 box of mushrooms
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp dried parsley
  • 1 tsp salt
  • 2 tsp black pepper
  • 1 bottle (12oz) of beer, Blue Moon is good
  • 1 tbsp olive oil
  • Pinch of dried/ground mustard
  • Honey

Order of Operations

  1. Preheat oven to 350 Fahrenheit
  2. Sear chicken on both sides in cast iron pan; set aside when seared, shouldn't be cooked all the way but properly seared
  3. Add olive oil for vegetables to cook and reduce
    1. Add mushrooms first, let cook for around 3 minutes depending on heat
    2. Add onions (you can also add a little more olive oil here if the pan is dry)
  4. Veggies will finish cooking together (mushrooms cook slightly slower), once veggies are cooked, pour in entire bottle of beer and allow it to reduce for ~10 minutes
  5. As beer reduces to a point where veggies don't float around but are still immersed in beer, re-add chicken to pan and add seasonings one by one to chicken
    1. Drizzle some honey by eyeballing a squeeze across each chicken part
  6. Let cook for 3~5 minutes, then turn off flame and move entire cast iron pan to oven, ensure the pan is uncovered
  7. Once cast iron pan is in oven, let cook for 25 minutes
