Chicken Fajita Fried Rice

Ingredients

  • Boneless chicken thighs (or diced chicken breasts, ground meat)
  • Sweet onion
  • Red pepper
  • Orange or Yellow pepper
  • Garlic
  • Rice
  • Marinade:
    • Avocado or Olive oil
    • Lime juice
    • Salt
    • Pepper
    • Garlic powder
    • Paprika
    • Ground coriander
    • Ground cumin
    • Oregano

Order of Operations

  1. Night before if possible: make a serving of rice and let it dry out in storage container in fridge
  2. Create chicken marinade in mixing bowl
  3. Get package of boneless skinless chicken thighs, cut into thin strips (about 1/4 inch in thin-ness) and add to mixing bowl with marinade
  4. Toss around to fully coat, set aside so it marinates
  5. While the chicken marinates, prepare vegetables:
    1. Sweet onion, thinly sliced
    2. Red pepper, thinly sliced
    3. Green pepper, thinly sliced
    4. Minced garlic
  6. Add chicken to heated skillet, let the chicken sear and set aside when completely seared. Leave fond in skillet
  7. Add a little extra oil to the skillet and toss in our vegetables with a little salt: peppers first until discoloration & softness, then onions
  8. Cook all veggies together for 2-3 minutes, then add garlic and cook for another 1-2 minutes
  9. Add the cooked rice to the veggies in the skillet and stir to lightly fry
  10. Add some extra lime juice, then re-add the chicken to the skillet on top of the veggies and rice.
  11. Mix the whole batch together, let it cool, and serve
