Chicken Fajita Fried Rice
Ingredients
- Boneless chicken thighs (or diced chicken breasts, ground meat)
- Sweet onion
- Red pepper
- Orange or Yellow pepper
- Garlic
- Rice
- Marinade:
- Avocado or Olive oil
- Lime juice
- Salt
- Pepper
- Garlic powder
- Paprika
- Ground coriander
- Ground cumin
- Oregano
Order of Operations
- Night before if possible: make a serving of rice and let it dry out in storage container in fridge
- Create chicken marinade in mixing bowl
- Get package of boneless skinless chicken thighs, cut into thin strips (about 1/4 inch in thin-ness) and add to mixing bowl with marinade
- Toss around to fully coat, set aside so it marinates
- While the chicken marinates, prepare vegetables:
- Sweet onion, thinly sliced
- Red pepper, thinly sliced
- Green pepper, thinly sliced
- Minced garlic
- Add chicken to heated skillet, let the chicken sear and set aside when completely seared. Leave fond in skillet
- Add a little extra oil to the skillet and toss in our vegetables with a little salt: peppers first until discoloration & softness, then onions
- Cook all veggies together for 2-3 minutes, then add garlic and cook for another 1-2 minutes
- Add the cooked rice to the veggies in the skillet and stir to lightly fry
- Add some extra lime juice, then re-add the chicken to the skillet on top of the veggies and rice.
- Mix the whole batch together, let it cool, and serve
