One Pot Turkey and Pepper Pasta

Ingredients

  • 2 lbs Ground turkey
  • Fennel
  • Paprika
  • Salt
  • Garlic powder
  • Onion powder
  • Oregano
  • Pepper
  • Red pepper
  • 3 Garlic cloves
  • 1 jar of Tomato sauce (Rao's)
  • 10oz-ish Pasta (Cellentani)
  • 1 Onion
  • 1 Bell pepper
  • 1/2 cup of Parmesan cheese
  • 1/4 cup of Half & half
  • 140g Spinach (1 box)

Order of Operations

  1. Prepare the veggies
    1. Slice or dice the pepper
    2. Slice or dice the onion
    3. Mince the garlic cloves
  2. Add 1 tbsp olive oil and all the ground turkey to a 6~8 quart pot, press the meat down into the pot and let it sear for 3~4 minutes
  3. Once the meat starts to sear, break it up into chunks, then sprinkle in all your seasonings: fennel, paprika, salt, garlic powder, onion powder, oregano, black pepper, red pepper. Mix the meat and seasonings together and continue to cook until the meat is about 90% cooked.
  4. Create a well in the center of the pot by pushing all the meat to the outside. Depending on the fat percentage of the ground turkey, add in an additional tbsp oil into that well, but if there's enough liquid from the turkey you can leave out the extra oil.
  5. Put the sliced/diced peppers in the center and let them cook up for a few minutes until they soften.
  6. After the cut peppers soften and develop, add the onion into the center and let the onions cook up as well.
  7. After both the pepper and onions are cooked, add in the minced garlic cloves and mix everything together
  8. Add the jar of tomato sauce to the pot and stir it in, let it cook for a minute
  9. Add the pasta to the pot and stir to coat, let it cook for another minute
  10. Add 2~2.5 cups of water to the pot, ensuring all the pasta noodles are under water
  11. Let the water-tomato sauce come to a boil, then lower the heat to simmer and cover the pot.
  12. Cook for 12~15 minutes
  13. After time's up, check a noodle for done-ness. If done, add the parmesan cheese and half & half, then stir to combine
  14. Once the cheese and half & half is incorporated, add the spinach and stir until the spinach reduces
  15. Take the pot off heat, let it cool slightly, and dole out into containers; this should make 5-ish containers of pasta
